I went to the Civic Center farmer’s market and one of the most enticing booths was a one with jars and jars of raw, natural honey on it. I walked up to the guy working there and said, “You must really love honey. I’ve never seen so much honey. Why is it special to you?”

“Honey is amazing! They found bee hives that were made 2500 years ago in Egypt. They found honey in clay jars that was thousands of years old. It was crystallised but still edible. The bees have evolved to make honey that doesn’t spoil. They put enzymes in the honey that prevents bacterial growth, the honey is slightly acidic so fungus doesn’t grow in it. It’s a natural sweetener that doesn’t have sugar added to it. It’s a perfect food for insects and it’s a great supplement food for humans. And we need bees to pollenate our crops, a third of all our food comes from bees so we need them.”

“How was it that you got into selling honey?”

“I actually used to sell cars and I didn’t like it. I didn’t believe in what I sold. And I used to come to the farmer’s market, I like the environment. I like the natural, organic foods. So I asked around if there was any work and got the opportunity to work with Marshall’s Farms. As soon as I got the job I liked it a lot so I took it upon myself to learn about bees and honey, read wikipedia articles, just learn as much as I can. I love it. I love the farmers market. I love honey.”

“What kind of changes have you noticed in yourself since you started eating organic food?”

“I feel a lot better. I feel rested. I come into contact with all kinds of pathogens but it doesn’t effect me as much. I’ve got a stronger immune system. I just eat a lot of raw fruits and vegetables and soak up the nutrients, straight from the farmers.”
